1 large yam, baked and cooled
3/4 cup firmly packed light brown sugar
1/2 tsp salt
2 lg eggs
1 tsp ground cinnamon
1/4 tsp ground allspice
1/2 cup heavy cream
1 tsp lemon extract
1 tsp lemon zest
1 tsp vanilla extract
Puree yam in food processor. In a large bowl, combine brown sugar, salt, eggs,add cinnamon,allspice, vanilla and lemon extract, lemon zest. Stir in pureed yam, heavy cream, beat till smooth. Pour mixture into partially baked pie shell. Bake at 350 degrees for 45 minutes. Remove pie and let cool. Enjoy!
